Mealthy HandBlend Immersion Blender Set {#MealthyMoms Giveaway! }


I've been wanting an immersion blender for a while. I hear they are pretty handy to have around and they certainly take up a lot less space than my regular blender. Not to mention, I don't have to dirty as many dishes because you can bled everything up and together all in one pot/cup/ bowl. Recently Mealthy released an immersion blender and they sent me one to check out for you guys. Here's what I thought of it (and what I made).

I've been so extremely stressed out lately between the holidays and various other things I obviously am not going to get into here. So I really needed some comfort foods to make me feel better. I remember when I was growing up that this time of year I ate a lot of tomato soup and grilled cheese. They are some of my favorite comfort foods. Things I don't normally eat, but I tend to have when I just need a little extra comfort and maybe a bit of nostalgia to make me feel better. 

Growing up, my mom always just bought canned tomato soup. It was easier then spending the time making homemade, or at least I thought. It turns out, homemade tomato soup really isn't that difficult or that much longer to make. I decided I wanted to try my hand at making it homemade. I mean, if I am really wanting this comfort food, I wanted to have the comfort of knowing I put a lot of love into it instead of just opening a can and dumping it in a pot to heat it up. 


The Mealthy HandBlend Immersion Blender is stainless steel; BPA free, comes with a few accessories and I can see this coming in really handy for family and holiday dinners. This thing chops, purees, blends, and so much more. Also, it's super convenient for smoothies and milkshakes, too, because it even comes with a smoothie cup, which I love. It blends ice perfectly, so you know these blades are high quality and ultra sharp. So to say this thing is going to get a lot of use is an understatement. Also, did you know Mealthy has a variety of really great recipes you can check out, both on their app, and they even include a little recipe booklet with the hand blender! There are 10 speeds and a turbo button in case you need that burst of speed. I can see me using the chopper bowl a lot, too, to dice onions. I hate dicing onions, so this is beyond handy. 

So anyways, back to the soup.

I'm going to be honest, I am one of those cooks that usually just throws things together and hopes for the best. I rarely measure ingredients. And you know, you would think this would be a disaster, but I've been lucky that in all the years I have been cooking, I haven't had a bad meal. As a matter of fact, no one can seem to figure out how I get so lucky. Is it really luck, or am I just one of those people who can make pretty much anything on the first try? I don't know, but this ended up being one of those times. 


I'm not lying, I absolutely threw everything together on my own here, but also, you have to consider that this is just tomato soup and I'm not even sure there's a way to screw that up. What's the worst that could happen? You might get ketchup or spaghetti sauce, right? I ended up with perfect soup though, so I call that a win. I did double check Pinterest to make sure I had all the ingredients, but beyond that, I think when it comes to things like this in particular, it's all about taste preference. 


Homemade Roasted Tomato Soup

2 cups cherry tomatoes (I'm really guessing here. I just used an entire plastic container that I picked up at the store)
 olive oil 
1 teaspoon salt and pepper (give or take)
1 tablespoon garlic (I used the kind that comes in a jar, but you can convert this and use cloves. I think this would equal 2 fresh cloves)
3 cups chicken broth
1 (28 oz) can diced tomatoes (don't drain them!)
1 teaspoon garlic salt
1 teaspoon garlic powder
1/2 teaspoon black pepper
Preheat oven to 400 degrees F. Place cherry tomatoes on a baking sheet and drizzle some olive oil over top, along with the salt and pepper. Roast tomatoes in oven for about 20 minutes or until they have a nice roasted color to them. I wouldn't go any longer than 20 minutes, though. 20 is max unless you want the oil to burn. They don't take much to roast them, so keep an eye on them. 
In a large pot, drizzling roughly 1 1/2 tablespoons of olive oil set to a medium high heat. Add in the garlic, sauteing for 4-6 minutes. I see some people add onions to theirs. I didn't. But if you do, you are going to want to saute until the onions are translucent. Add in the roasted tomatoes, chicken broth, canned tomatoes with the juices included, garlic salt, garlic powder, and pepper. Bring soup to a boil, then set to a low simmer. Partially cover pot and allow to simmer until soup is nice and hot. With the immersion blender, blend up the soup to your desired consistency. I made sure ours was blended pretty good because the Mister doesn't like whole tomatoes. It's a texture thing. But otherwise, he loves tomato soup and sauces. And he loved this. 
One thing I would change next time is to strain the soup and get the tomato seeds out. I don't have a small enough strainer for something like that, though. If seeds don't bother you, then you probably don't have a need to do that.
